52 Recipes: Peanut Butter & Banana Scones

This week's recipe was really just a big experiment. I knew that I wanted to do something with peanut butter and banana but couldn't decide on exactly what. I started out with a rough outline of a recipe and ended up with a sort of fluffy scone. Whatever it is, I swear it's easy and delicious. 

First things first, preheat the oven to 400˚ and gather your ingredients.

2 cups flour, 2.5 tsp baking powder, 1.5 tbsp sugar, 1/2 tsp salt

1 egg, 1/3 cup vanilla yogurt

2 bananas, 1 tsp honey

1/2 cup peanut butter chips
Once you have the ingredients prepped as seen above, begin mixing them together. First the wet into the dry, then add the banana mixture, and finally the peanut butter chips. Stir until they are all combined thoroughly. Now just grease your baking sheet and spoon out 1 tbsp balls of batter.

Let them bake for 10 minutes or until golden on top. Told you they were easy!

Honestly, these turned out so much butter than expected. They were light and fluffy but still full of flavor. The peanut butter chips added just the right about of sweetness. Today has been another cold and gray one,  and I can't wait to sit down with a warm cup of coffee and two (or three or four, whatever) of these and watch a few episodes of Friday Night Lights.
