52 Recipes: Pizza Muffins

I am so happy to be back after  a couple crazy weeks! This week's recipe is another variation on pizza (I swear this wasn't on purpose and it won't become a regular thing. This is not a pizza blog.). I'm calling this creation Pizza Muffins, and I had so much fun making them. As I've been working on this post my mind has been racing with all the flavor and topping possibilities I could play with next time I make these. The best part about pizza muffins is how portable they are. They have all the heartiness of pizza, but they'd be perfect finger food for any party or meal on the go. Also, they're super easy. I hope you all love them as much as I do!

First you'll need to prepare the dough. I used a can of large Pillsbury biscuits for 12 muffins. Tear each biscuit into thirds and roll them into individual balls. Once that's done, set them aside and get to work preparing your toppings. 

I opted for pepperoni and veggies, but feel free to get as creative (or traditional) as you want.

1/4 cup diced onion, 1/4 cup diced green pepper

1/2 cup shredded spinach

1/2 cup sauce

Once you have your dough and toppings prepared you're ready to begin assembling. Take one ball of dough and create a bowl at the base of your first muffin tin. Spoon in some sauce and layer on your toppings. This first layer should fill about half of the tin. Use another ball of dough to create a second layer and cover it with more sauce and toppings. This should fill your tin completely without any overflowing. Repeat this process until all tins are full.

Bake for approximately 15 minutes at 350°, let cool for a few minutes and then enjoy.
