peanut butter banana cupcakes

It is absolutely shameful how long this post has been sitting in my drafts. I made these amazing little treats weeks ago, and then I got a new job and my life turned on its head. Now I'm back and so excited to share this recipe with you guys! Seriously, if you've never tried one of my recipes before then this is the perfect first one. It was basically an accident that they turned out so stinking good, but it was definitely a happy accident. 

The ingredients are simple: 2.5 cups flour, 2 cups sugar, 2/3 cup oil, 2 cups water, 2 tbsp vinegar, salt, 2 tsp baking soda, 1/2 tsp vanilla extract, 1 tsp cinnamon and a banana. (The recipe is adapted from a basic vanilla recipe from Emma.)

As with all cupcakes, first mix the wet (including the banana) and dry ingredients separately, and then stir together just long enough to remove any lumps. Pour about 2 tbsp of batter into each liner. Bake at 350 for 20-25 minutes. 

While they're baking, and filling your house with the most incredible scents, go ahead and mix up your peanut butter "icing". There is no exact science to this, but you'll need peanut butter and oil. Spoon the desired about amount of peanut butter into a bowl and add 1 tsp of oil at a time until it's reached a consistency you like. Once your finished, spoon your icing into a ziplock bag and wait for your cupcakes to be finished!

They should come out of the oven when they're golden brown and pass the classic clean toothpick (or in my case, sish kabob skewer) test. Let them cool before icing them. 

Pipe a circle of peanut butter around the edge of each cupcake (presentation inspired, again, by Emma.) 

And then fill the circle with honey!! 

Guys, these were amazing without being too sweet. The combination of cinnamon, banana, peanut butter and honey was perfect. I will warn you though that the honey will be absorbed into the cupcake if left sitting for too long. I recommend adding the honey right before serving, or even letting guests add it themselves.
